You can use any bait for the normal creatures. You also don’t need to wait longer to receive better or more crabs & lobsters in your trap. The only case where you need to have specific bait is for the rare types. When setting a crab trap, it says “The chance of catching rare species increases if you use higher-grade bait”. Only two species able to be caught in a crab trap are considered rare according to their Marinca cards, the blue lobster and crystal lobster, both of which can only be caught at night.
